Secret Santa Blog Hop

Does your holiday schedule leave you out of breath and scrambling for the time to eat something, anything? Well, fear not, this slow cooker oatmeal recipe will allow you to pre-assemble delicious ingredients, and have a nutritious meal ready when you're ready! Which might even earn you enough time to curl up with a good urban fantasy book.
Apple Pie Oatmeal
1 cup of steel cut oats
4 cups of water
2-3 peeled and chopped apples (Granny Smith if you like tart, apple pie taste)
3 tablespoons of ground flaxseed (I like the blueberry flavored variety from TraderJoe's)
1.5 teaspoons of ground cinnamon
1 teaspoon of nutmeg
2 tablespoons of your favorite sweetener (I like honey powder)
1 teaspoon of vanilla extract
1 cup of chopped walnuts (optional)

Spray the inside of your slow cooker with non-stick spray (like Pam). Add all the above to your crock pot, stir, put on the lid and set to Low. Allow to cook for 5-7 hours. (Five if you like firm, 7 if you like mushy). Scoop out a healthy portion, douse with your favorite variety of milk, and add more sweetener or fruit, as necessary.
